Rassolnik - Russischer Eintopf / Russian Stew
Wir führen hier seit Monaten ein Leben auf dem Eis, da braucht man ab und zu einfach einen deftigen Eintopf. Dieses Rezept kommt aus dem kalten Russland und wärmt die Seele in dieser Zeit!
Rassolnik (Russischer Eintopf)
3 Scheiben Kalbskotellet (ca. 750 g)
2 Liter Wasser
50 g Graupen
1 große Möhre
2 Stück Zwiebeln
4 Stück Lorbeerblätter
1 EL Pfefferkörner
6 Stück Kartoffeln
5 Stück Salz-Dillgurken mit etwas Gurkenbrühe
1 TL Zucker
1 TL Chilipulver, nach Geschmack
1 Bund Dill
1 Bund Petersilie
1 Becher Crème fraîche
Das Fleisch in kaltem Wasser aufsetzen und zum Kochen bringen. Den Schaum abschöpfen, dann die Graupen zufügen und alles 30 Minuten kochen.
Die Möhre und die Zwiebeln fein hacken und zufügen, Lorbeerblätter und Pfefferkörner auch.
Weitere 30 Minuten köcheln.
Die Fleischscheiben rausfischen, Fleisch von den Knochen lösen und in Würfel schneiden. Die Fleischwürfel zurück in die Suppe geben. (Vorher habe ich die Suppe wegen der Möhrenstücke etwas püriert.)
Kartoffeln schälen und in kleine Würfel schneiden, in die Suppe tun, noch ca. 10 Minuten kochen, bis sie fast gar sind.
Die Gurken grob würfeln oder in Scheiben schneiden und die Stücke und ca. 100 ml Gurkenwasser zufügen.
Mit Salz, Pfeffer, Zucker und evt. Chilipulver abschmecken.
Kräuter fein hacken und zugeben, untermischen.
Die Suppe in Teller füllen und mit einem Klacks Crème fraîche servieren.

50 g pearl barley
1 large carrot
2 pieces of onions
4 pieces of bay leaves
1 tablespoon black peppercorns
6 pieces of potatoes
5 pieces of dill pickles with some of the liquid
1 teaspoon sugar
1 teaspoon chili powder, to taste
1 bunch dill
1 bunch parsley
1 cup crème fraîche
Put meat in cold water and bring to a boil. Skim the foam, then add pearl barley and cook for 30 minutes.
Chop carrots and onions, add to meat, together with bay leaves and peppercorns.
Simmer for another 30 minutes.
Take meat out of the soup, cut from the bones and into cubes. Put meat cubes back into the soup. (I've pureed the soup, because of the little pieces of carrot which I don’t like.)
Peel potatoes and cut into small squares, cook in the soup for about 10 minutes until almost done.
Dice cucumbers coarsely or cut into slices, add to the stew as well as about 100 ml of cucumber water.
Season the stew with salt, pepper, sugar and chili powder.
Chop dill and parsley finely and add, toss well.
Scoop on plates, add some crème fraîche to each plate and serve.

Beef Meatballs in Orange Sauce - Recipe in English
Sorry, it took quite some time to translate this recipe, and I hope it's understandable. If you have questions, please feel free to ask.
Hackbällchen vom Rind in Orangensauce -
Beef Meatballs in Orange Sauce -
ลูกชิ้นเนื้อซอสส้ม
4 oranges
5 + 5 chillies, red
3 + 3 cloves garlic
5 spring onions
4 slices of toast
1 kg minced beef
2 egg yolks
oil for frying
1 large can of tomatoes (approx 800 g)
10 tablespoons soy sauce (or more)
1 tsp cinnamon
5 tbsp honey
salt
black pepper
some lemon juice
some sugar
Wash oranges well with hot water. Remove peel with a potato peeler (just the peel, without the white layer under the skin!). Mince peel with a blender.
Fillet orange (if you don’t know how, youtube can help: http://www.youtube.com/watch?v=HJztOQvR6_g), save juice, and cut the meat into small pieces. Transfer them into a bowl, we’ll need them later.
Mince garlic and chilies finely, and split them into two piles.
Cut toast into small cubes and chop spring onions.
Put minced meat in a large bowl, add the following ingredients:
The chopped orange peel
Half of the chillie-garlic mixture
The toasted bread, cut into cubes
The chopped spring onions
The 2 egg yolks
7 (from 10) tablespoons of soy sauce
Salt, pepper, cinnamon
Now, mix very well and season to taste, should be spicy.
Make meatballs of the size of a big walnut, I got about 70 of them out of the mixture. Put them aside. (I use a big baking tray, covered with aluminum foil.)
Chop canned tomatoes, and add them, including the juice, to the bowl with the oranges. Add the remaining 5 tbsp of honey, and 3 tbsp soy sauce.
Heat some oil, and fry the rest of our garlic - chillie mixture for a minute or two. Add tomatoes and oranges and bring mixture to cook. Add salt and pepper and let it simmer for a few minutes.
Heat some oil in a wok and fry your meatballs, in small portions. Transfer them into the orange-tomato sauce. When all balls are fried, let them simmer for about 10 minutes.
Now, season the sauce. Up to your taste, add some salt, sugar, more chillie, and lemon juice to balance the taste.
You will get about 70 walnut-sized meatballs out of this mixture.
I always freeze some of the balls, because the preparation needs quite some effort, and time. But it’s worth it!

Hackbällchen vom Rind in Orangensauce - Beef Meatballs in Orange Sauce - ลูกชิ้นเนื้อซอสส้ม
Ein tolles kleiner Snack, eine Art Taparezept. Die englische Version muss noch überarbeitet werden, wird aber in einigen Tagen hier zu finden sein.

Hier ist das Rezept in Deutsch:
Hackbällchen vom Rind in Orangensauce -
Beef Meatballs in Orange Sauce -
ลูกชิ้นเนื้อซอสส้ม
Ergibt ca. 70 kleine Bällchen – makes about 70 small meatballs
4 Orangen
5 + 5 Chilieschoten, rot
3 + 3 Zehen Knoblauch
5 Lauchzwiebeln
4 Scheiben Toastbrot
1 kg Gehacktes vom Rind (oder gemischtes Gehacktes)
2 Eigelb
Öl zum Braten
1 große Dose Tomaten (ca. 800 g)
10 EL Sojasauce (evt. mehr)
1 TL Zimt
5 EL Honig
Salz
Schwarzer Pfeffer, frisch geschrotet
Etwas Zitronensaft
Evt. etwas Zucker
Orangen gut heiß abwaschen. Die Schalen mit einem Sparschäler dünn abziehen (nicht das Weiße unter der Haut!) und dann mit dem Stabmixer kleinhacken.
Dann Orangen filetieren, Saft dabei auffangen, und Filets in kleine Stücke schneiden.
Chilieschoten und Knoblauch fein hacken und in zwei Häufchen teilen.
Toast in kleine Würfel schneiden, Lauchzwiebel in dünne Ringe.
Das Hackfleisch in eine große Schüssel geben, folgende Zutaten zugeben:
Die gehackten Orangenschalen
Die Hälfte der Chilie-Knoblauchmischung
Das gewürfelte Toastbrot
Die gehackten Lauchzwiebeln
Die 2 Eigelb
7 (von den 10) EL der Sojasauce
Salz, Pfeffer, Zimt
Sehr gut vermischen und würzig abschmecken.
Eine große Arbeitsfläche bereithalten (ich nehme ein Backblech, mit Alufolie ausgelegt) und eine Schüssel mit kaltem Wasser. Aus der Hackfleischmasse jetzt mit angefeuchteten Händen kleine, gut walnussgroße Bällchen formen und auf der Arbeitsfläche nebeneinander legen.
Tomatenstücke grob hacken und mit dem Saft in die Schüssel mit Orangenfilets und Orangensaft geben. Die 5 EL Honig und restliche 3 EL Sojasauce zugeben.
In etwas heißem Öl den Rest der Knoblauch-Chilie-Mischung anbraten. Die Orangen-Tomatenmischung zugeben und aufkochen lassen. Salz und Pfeffer zugeben und etwas einkochen lassen.
Jetzt Öl in einer hohen Pfanne (ich nehme meinen Wok) erhitzen und die Fleischbällchen portionsweise anbraten. In die Sauce geben. Wenn alle gebraten sind, sollen sie noch ca. 10 Minuten in der Sauce durchziehen.
Die Sauce nun abschmecken: Nach Wunsch mehr Salz, noch etwas Zucker, mehr Chilie (es geht auch Pulver), evt. auch ein wenig Zitronensaft zugeben, bis der Geschmack richtig ausbalanciert ist.
Diese Mischung ergibt ca. 70 gut walnussgroße Bällchen. Man kann sie problemlos einfrieren, denn die Zubereitung macht doch etwas Mühe, die ich mir nicht so oft antun möchte.
