Gebratener Reis mit Meeresfrüchten / Fried Rice Seafood / Khao Phad Talee




Gebratener Reis ist der Rettungsanker für alle neuen und vorsichtigen Asienreisenden, es soll sogar Menschen geben, die sich in Thailand monatelang ausschliesslich davon ernähren können.

Lange Zeit habe ich verächtlich auf den armen gebratenen Reis geschaut, bis ich endlich verstanden habe, wie lecker er sein kann, wenn er nur richtig gemacht ist. Und wer kann das besser als Noong?

Gebratener Reis wird oft bestellt bzw gereicht, wenn ein umfangreiches Menü gegessen wird, und oft ersetzt er dann den weissen Reis. Er soll also nicht zu intensiv gewürzt sein, trotzdem soll er so schmecken, dass man ihn auch alleine geniessen kann.

Ich habe viele Rezepte und Fotos gesehen, die alle nicht so waren, wie ich den gebratenen Reis mag. Also habe ich ihn jetzt mit Noong zusammen gekocht, und immer die Kamera draufgehalten.

Fried rice is the stand-by for all cautious first-time visitors to Asia. Rumor has it that some travelers feed themselves on fried rice for months, eating nothing else.

For a long time I despised the lowly fried rice, but finally understand how tasty it can be if prepared in the right way. And who can do that better than Noong.

Fried rice is often ordered as part of an extensive Thai menu, and often replaces the simple white rice. Therefore, it should not be seasoned much, but should be tasty enough to be eaten on its own.

I’ve seen so many recipes and pictures of this dish that are far from the fried rice I like. So I cooked it together with Noong, with my camera handy. Have a look! :)





Gebratener Reis mit Meeresfrüchten / Khao Pad Talee / Fried Rice Seafood

Für 2 Personen


1 Tasse Reis
1EL Butter
1 TL Öl
½ Zwiebel, gehackt
1 Tasse Meeresfrüchte, gemischt, bratfertig
2 Eier
Etwas Öl zum Braten der Eier
½ Tasse Gemüse nach Wahl, fein gewürfelt (z. B. Paprika rot, gelb, grün, Karotten)
Frühlingszwiebeln
Gurkenscheiben als Garnitur
Gekörnte Brühe
Helle Sojasauce
Zucker


Den Reis knapp garkochen, er soll noch gut Biss haben.

Eier mit etwas heller Sojasauce verquirlen. In etwas heissem Fett ein Rührei zubereiten, zur Seite stellen.

Butter und Öl in einer grossen Pfanne erhitzen, Zwiebel darin andünsten, Gemüsewürfel zugeben und weich dünsten.

Mit reichlich gekörnter Brühe (statt Salz), etwas heller Sojasauce und ca. ½ EL Zucker kräftig würzen, denn der Reis soll später möglichst nicht mehr Würze bekommen müssen.

Die Meeresfrüchte zugeben und einige Minuten unter Rühren braten. Achtung, sie müssen trocken sein, sonst gart der Reis nachher zu sehr nach! Ggf mit Küchenkrepp abtupfen.

Jetzt Reis zugegen und unter ständigem Rühren einige Minuten braten. Das Ei und die gehackten Frühlingszwiebeln untermischen, abschmecken und dann mit Gurkenscheiben anrichten und servieren.





Fried Rice Seafood

Serves 2

1 cup rice
1 tbsp butter
1 tsp oil
½ onion, chopped
2 eggs
Some oil to fry eggs
1 cup seafood like shrimps and squid, ready for frying
½ cup vegetables of your choice, finely chopped (bell peppers green, red, yellow, carrots
Some spring onions, chopped
Cucumber, sliced, to garnish
Stock powder
White soy sauce
Sugar


Cook rice, leave it slightly undercooked.

Whisk eggs with some light soy sauce. In a pan, heat some oil and make scrambled eggs.

Take a big pan and heat up butter and oil. Add onions and vegetables and fry until soft.

Season well, using a generous amount of stock powder (instead of salt), some white soy sauce, and about ½ tbsp of sugar. Try to season good enough so that the rice will not need more seasoning later.

Pad seafood dry (if still wet, the rice will get too soft), add to the vegetables and fry for some minutes.

Now, add the rice, mix everything well and stir constantly. Fry for some minutes. Then add scrambled egg and spring onions, mix again and serve on a plate with slices of cucumber.
