Eine thailändische Köstlichkeit: Grüne Mangostreifen mit einem süss-salzig-scharfen Dip - A Thai Delight: Slices of Green Mango with a Salty Spicy Sweet Dip

Ich bin immer wieder sehr gerne in Krabi, weil es für mich dort immer wieder etwas Neues zu entdecken gibt. Der Abendessenmarkt im Zentrum ist einfach wunderbar, bei jedem Besuch finde ich Dinge, die ich noch nicht kannte.

Diesmal habe ich diese kleinen grünen Mangos entdeckt, die mit einer sehr dunklen Sauce angeboten werden. Ich habe keine Ahnung, wie man den Kern aus den Früchten bekommt, aber es werden dünne Mangoringe mit Loch in der Mitte verkauft, und dazu gibt es diese sehr leckere Sauce, die ein wenig Jam-artig aussieht und schmeckt, süss, salzig und ganz leicht scharf, und die absolut göttlich zu den sauren Mangoscheiben passt.

Ich habe leider noch nicht herausbekommen koennen, wie sie gemacht wird. Gekocht mit Zucker und Gapi (Garnelenpaste) wird sie wahrscheinlich, mehr kann ich erst mal nicht sagen. Sollte jemand meiner Leser helfen können, wäre ich sehr dankbar!

Gut, dieses Rezept kann ich also nicht anbieten. Aber meine Freundin Noong hat mit mir ihre Version gemacht, und die schmeckt mindestens genauso lecker. Und die geht so:


Mangos mit Dip in Krabi


I love Krabi because I always find interesting things to discover. The evening food market in the center of the city is so wonderful; each time I visit I make new discoveries.

This time, I found these small green mangoes which come with a dark sauce. I have no idea how they manage to get the stones out of the fruits, but these mango rings are perfectly round and have a hole in the center. These rings are sold with this incredibly tasty sauce which is a little bit like a jam. The taste is sweet, salty, and a tiny little bit spicy. It’s absolutely delicious in combination with the tangy slices of mangoes.

Unfortunately, I wasn’t able to find a recipe for this dip. I guess it needed to be cooked with palm sugar and gapi (shrimp paste), but I don't know anymore at the moment. If any of my readers could help – that would be very much appreciated!

Well, I am so sorry that I can’t tell you how to make this dip. But my friend Noong showed me her version which is at least as tasty. And here is the recipe:

Mangos mit Dip in Krabi 


Grüne Mangostreifen mit einem süss-salzig-scharfen Dip

3 grüne saure Mangos, geschält und in dünne Scheiben geschnitten
1 EL Gapi (Garnelenpaste)
1 EL getrocknete Garnelen
3-4 EL Palm- oder Kokosnusszucker
½ EL getrocknete Chilies
½ EL Chilies (Prik Kee Nuu) – je nach Wunsch und Geschmack
3 EL Thai Schalotten
1 EL Fischsauce (vorsicht dosieren, abhängig von Gapi)




Die Mangoscheiben in einer Schüssel mit Wasser aufbewahren.
Gapi in Alufolie einwickeln und kurz grillen oder auf der Flamme des Gasherds 2 – 3 Minuten rösten.
In eine Schüssel geben.
Garnelen und Palmzucker zufügen.
Getrocknete Chilies zerbröseln, zugeben.
Frische Chilies fein hacken, zugeben.
Thai-Schalotten halbieren und in feine Scheiben schneiden, zugeben.
Alles sehr gut verrühren und mit Fischsauce abschmecken. Evt. noch etwas mehr Zucker und Chilies zugeben.

Mangostreifen auf einem Teller anrichten, den Dip in einer kleinen Schale dazu stellen.







Slices of Green Mango with a Salty Spicy Sweet Dip

3 green sour mangoes, peeled and cut into thin slices
1 tbsp gapi (shrimp paste)
1 tbsp dried shrimps
3-4 tbsp palm sugar or coconut sugar
½ tbsp dried chilies
½ tbsp fresh chilies (Prik Kee Noo), optional
3 tbsp Thai shallots
1 tbsp fish sauce (be careful, amount depends on the taste of gapi!)




Keep sliced mangoes in a bowl of water.

Wrap shrimp paste (gapi) in aluminum foil and roast for a few minutes. Place in a bowl.
Add dried shrimps and sugar.
Chop chilies, both dried and fresh ones, if you want to add fresh ones.
Cut Thai shallots in half and then in thin slices.
Combine all ingredients and mix very well. Add fish sauce. Season to taste, using some more sugar and some more fish sauce, if needed.

Arrange mango slices on a plate, and serve dip in a small bowl.

Mittagessen auf dem Markt in Krabi - Lunch at Krabi Market


Drei Gerichte (Phad Phed Nuea, Khua Kling Pla, Gaeng Khiau Wan Gai - gebratenes scharfes Rind, scharfer Fisch, gruenes Curry mit Huhn) und Nam Prik Gapi mit Gemuese und Wasser fuer THB 40 - und so lecker!

Three dishes (fried spicy beef, spicy fish, green curry chicken) and this dip with vegetables, and water - all for 40 THB = 1 USD. Very tasty!

Thailand: Essen in der Schule - Eating at School


Alle Schulen in Thailand bieten Essen fuer die Schueler an, aber in dieser Schule werden die Gerichte so richtig schoen praesentiert. Ich habe sofort Lust bekommen, mich durchzuprobieren und habe das auch getan!

Die Verpflegung gibt es nicht umsonst in dieser Schule. Hausfrauen reisen mit ihren mobilen Kuechen an und bieten ihre Produkte fuer 5 oder 10 thailaendische Baht an.



All Thai schools offer food for the kids, but in this school the dishes are presented in a truly appetizing way. It looked so mouthwatering that I just had to sample the dishes!

Food is not for free in this Thai school; housewives arrive with their mobile kitchens and offer their products for 5 to 10 Thai baht a plate.
