Good Old Swabian Potato Salad - gemeiner schwäbischer Kartoffelsalat

Hmmmmm, so lecker!




Jeder Schwabe kennt das Rezept, deshalb hier in Englisch:

Potato Salad Swabian Style
(serves 4)


1 kg potatoes, small waxy ones for salad
1 big onion, finely chopped

250 ml hot beef stock (or chicken stock)
Salt, pepper
6 tbs vinegar
6 tbs sunflower oil
1 handfull dill, or chives, chopped

optional:
5 spring onions, or ½ cucumber, finely sliced


Boil the potatoes with skins until soft, then peel and slice them while still hot. Let them cool.
Add the onion.
Mix the hot stock with salt, pepper and vinegar and pour 1/3 of it over the potatoes. Let the salad soak for 30 minutes, and check if more stock is required. The salad should be “wet”.
Add the oil and herbs, and the chopped spring onions. Mix thoroughly, and let it soak again for 30 minutes.
Eat the salad while still warm.


(Specially tasty with home made beef or chicken stock)
